Feta Tabbouleh With Orange

Ingredients

  • 250g bulghur wheat
  • 450g ripe but firm tomatoes, diced
  • 1 red onion, finely chopped
  • 50g stoned black olives, halved (optional)
  • 1 green or red chilli, deseeded and diced (optional)
  • 4 tbsp chopped fresh herbs (such as mint, basil and/or coriander)
  • 1 garlic clove, crushed
  • ½ tsp caster sugar
  • 2 tbsp extra virgin olive oil
  • 2 oranges
  • 200g feta cheese, diced
  • 25g toasted flaked almonds
  • TO SERVE 200g cos lettuce, chard and young spinach leaves
