- 1 butternut squash - peeled, seeded, and cubed

- 1 bay leaf
- 2 teaspoons curry powder
- 1 teaspoon dried thyme

- 1 Granny Smith apple - peeled, cored and cubed
- 4 cloves garlic, minced
- 225ml unsweetened apple juice
- 1.5L chicken stock
- 1/2 teaspoon ground nutmeg (optional)
- 350ml soured cream
