Steamed Vegetables With Peanut Dip

Ingredients

  • 2/3 cup (170 ml) water
  • 1/3 cup (100 g) smooth peanut butter
  • 1 clove garlic, minced
  • 2 teaspoons grated fresh ginger
  • 2 spring onions, chopped
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • pinch of chilli powder
  • 1 tablespoon freshly squeezed lemon juice
  • 6 large carrots, peeled, halved lengthways, cut in 3 x 5 mm sticks or 16 baby carrots with tops, scraped
  • 2 large red or yellow capsicums, halved and seeded, sliced 5 mm thick
  • 250 g snow peas, trimmed or 250 g green beans, trimmed
  • 8 radishes, thinly sliced
