Chicken, Pesto And Pumpkin Risotto

Ingredients

  • 2 cups Arborio rice
  • 5 cups chicken stock, warm
  • 3 Tbsp pesto
  • 2 cups pumpkin, cubed
  • 2 cups baby spinach, roughly chopped
  • 250g feta cheese (low fat variety won't work, sorry)
  • 2 cloves garlic, crushed
  • 1 onion, finely chopped
  • 1/4 cup olive oil
  • 2 chicken breasts, cooked and roughly chopped

Description

This Is My Version Of The Increasingly Popular Pumpkin Risotto. Its Very Creamy With The Feta Through It And Totally Mooreish. I Played Around With It For Some Time Before I Got It To This Point. My Whole Family Love This Recipe And I Get Cheers From My
