- 4 coriander roots
- 1 bay leaf
- 3 tablespoons dark soy sauce
- 1 1/2 tablespoons salt, plus more to taste
- 8cm slice of the bottom of a Chinese cabbage
- 1 Chinese celery, cut in 10cm pieces
- Garnish:
- rice noodles for 6 people
- 300g swamp cabbage, blanched, sliced
- 1 Chinese celery, blanched, sliced
- 300g bean sprouts, blanched or fresh
- fried garlic
- pickled chillies, optional
- coriander and spring onions, thinly sliced
