  • 1 teaspoon finely chopped fresh thyme
  • 1/2 teaspoon finely chopped lemon zest
  • 3/4 cup freshly grated Parmesan cheese (about 2 ounces)
  • 2 whole pork tenderloins (about 2 pounds total)
  • 1/3 cup dry white wine, such as pinot grigio (optional)
  • 1 1/3 cups water (optional)
