  • 1 teaspoon curry powder
  • 1 teaspoon turmeric
  • 2 cloves garlic, minced
  • 1 1/2 pounds boneless, skinless chicken breast, or chicken tenders
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons chopped peanuts
  • For the peanut sauce:
  • 1/4 cup natural unsalted peanut butter, creamy or chunky
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon cayenne pepper
  • Special equipment:
  • Wooden skewers (1 per chicken strip)
