- 1 medium onion, peeled and coarsely chopped
- 2 medium carrots, coarsely chopped
- 5 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/2 cup (approximately) turkey drippings, additional low-sodium stock or water
- 1 tablespoon fortified wine, such as Madeira, sherry or Port (optional)
Makes 3 to 4 cups
