Ingredients

  • 2 C. low-sodium chicken broth
  • 2 Tbs. butter, plus 1 Tbs.
  • 1 large shallot, diced
  • 1 C. Arborio rice
  • 1/2 C. dry white wine
  • 2 Tbs. grated Parmesan, plus 2 Tbs.
  • 2 Tbs. mascarpone cheese
  • 1/2 a lemon, zested and juiced
  • 3/4 tsp. kosher salt
  • 3/4 tsp. freshly ground black pepper
  • 6 lemons, for serving
