Ingredients

  • 10 oz. pkg. frozen no-salt added chopped spinach, thawed and squeezed dry
  • 2 Tbs. light margarine, melted
  • 1 Tbs. fresh lemon juice
  • 1/8 tsp. pepper
  • 1/8 tsp. ground nutmeg, or to taste
  • Whites of 3 large eggs, stiffly beaten
  • Fat-Free Alfredo Sauce:
  • 5 oz. can fat-free evaporated milk
  • 1/2 medium clove garlic, crushed
  • 2 Tbs. grated Parmesan cheese
  • 1/4 tsp salt-free Italian seasoning
  • 1/8 tsp pepper, or to taste
  • 4 medium fresh mushrooms, sliced
  • 1/4 tsp light margarine
  • 1/2 fresh lemon's juice
