  • 1 C. chopped red bell pepper
  • 1 C. chopped green bell pepper
  • 1 C. chopped yellow bell pepper
  • 1 8 oz. can sliced water chestnuts, drained
  • 2 firm apples, such as Fuji or Gala, cut into one-inch pieces
  • 1/2 C. scallions, thinly sliced
  • Freshly ground black pepper, to taste
  • 2 C. steamed brown rice or whole wheat angel hair pasta
