  • 3 Tbs. flour
  • 1/4 C. light cream
  • 1 lb. mushrooms, sliced
  • 1/2 tsp. lemon juice
  • 1 dash salt
  • 1 dash cayenne
  • 1 Tbs. chopped parsley or watercress
  • Hollandaise Sauce:
  • 3 egg yolks
  • 1/4 C. butter, melted
  • 1/4 tsp. salt
  • 2 Tbs. lemon juice
  • 1/4 C. heavy cream, whipped until soft peaks hold
