Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1x19 ounce can chili-style stewed tomato
  • 1x14 ounce can tomato, sauce
  • 1x19 ounce can red kidney beans, drained, and, rinsed
  • 1/4 cup chopped fresh coriander

Cornbread Topping

  • 1 cup flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons butter, melted
  • 1 egg
  • 2 cups corn, kernels
  • 1 cup shredded Monterey Jack or cheddar cheese
