- 1 shallot, diced
- 1 clove garlic, minced
- 1 tablespoon (15 mL) Dijon mustard
- 1/4 cup (50 mL) red wine or champagne vinegar
- 3/4 cup (175 mL) extra virgin olive oil
- Salt and pepper to taste
