Individual Apple Dumplings with Cardamom Custard Sauce

Ingredients

Apple Dumplings

  • 2/3 cup ground hazelnuts
  •     or 2/3 cup ground almonds
  • 3 tablespoons unsalted butter, cut into pieces
  • 1 tablespoon hazelnut liqueur
  •     or 1 tablespoon brandy
  • 1 teaspoon vanilla extract
  • 4 MacIntosh apples, peeled and cored
  • frozen puff pastry, thawed but chilled (1-2 sheets)
  • 1 egg, whisked with 2 Tbsp water, for brushing
  • Turbinado sugar, for sprinkling

Cardamom Custard Sauce

  • 1 cup half-and-half cream
  • 3 pods green cardamom, lightly crushed
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
  • 2 tablespoons sugar
