- 1 tablespoon freshly ground black pepper (15 mL), plus more to taste
- 1/2 cup Chili Powder, recipe follows (125 mL)
- 1/4 cup vegetable oil (60 mL)
- 2 medium onions, diced
- 6 cloves garlic, peeled and smashed
- 3 tablespoons tomato paste (45 mL)
- 2 tablespoons ground cumin (30 mL)
- 1 tablespoon ground coriander (15 mL)
- 1 tablespoon dried oregano (15 mL)
- 2 bay leaves
- 1 cup tequila (250 mL)
- 2 cans whole tomatoes, crushed (28 ounces/840 mL)
- 5 1/2 cups Black Beans, recipe follows (1.375 L)
- 1 sprinkle Chopped cilantro, for garnish
- 1 sprinkle Chopped parsley, for garnish
- 1 Corn Bread, recipe follows
Chili Powder
- 5 ancho chilies, dried
- 1 chipotle chili, dried
- 1 habanero chili, dried
- 2 tablespoons cumin seeds, toasted (30 mL)
- 1 tablespoon dried oregano (15 mL)
- 1 tablespoon paprika (15 mL)
- 1 teaspoon cinnamon (5 mL)
Black Beans
- 4 cups dried black beans (1 L)
Cornbread
- 1 cup corn kernels, preferably fresh when available** (250 mL)
- 1 cup cornmeal (250 mL)
- 1 cup flour (250 mL)
- 1/3 cup sugar (75 mL)
- 2 1/2 teaspoons baking powder (12 mL)
- 1/2 teaspoon fine salt (2 mL)
- 1 cup buttermilk (250 mL)
- 1/2 cup unsalted butter, melted (125 mL)
- 1 egg
- 2 tablespoons jalapeno pepper, seeded and chopped (30 mL)
