Sweet Potato Shepherd's Pie

Ingredients

Sweet Potato Topping

  • 2 medium sweet potatoes, scrubbed
  • 2 medium Yukon gold potato, scrubbed
  • splash of olive oil, for roasting
  • Pinch allspice
  • Coarse salt and freshly cracked black pepper, to taste
  • 1/4 cup 10% cream (60 ml)
  • 1 tablespoon butter (15 ml)
  • Pinch freshly grated nutmeg

Meat Filling

  • 1 tablespoon butter (15 ml)
  • 1 pound ground pork (454 g)
  • 1/2 pound ground turkey (227 g)
  • 4 large shallots, finely, chopped
  • 2 cloves garlic, chopped
  • 2 stalks celery, finely, diced
  • 2 carrots, finely, diced
  • 2 teaspoons fresh chopped thyme (10 ml)
  • 1/2 teaspoon fresh chopped savoury (2 ml)
  • 1 teaspoon fresh chopped rosemary (5 ml)
  • Pinch ground cloves
  • 1/2 teaspoon ground cinnamon (2 ml)
  • 1 tablespoon Worcestershire sauce (15 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • 1 cup chicken stock (250 ml)
  • 1/2 cup dry white wine (125 ml)
  • Coarse salt and freshly cracked black pepper, to taste

Assembly

  • 3/4 cup 3/4 cup fresh or frozen peas (175 ml)
