Ingredients

Chicken

  • 3 boneless skinless chicken breasts, about 1 ½ lbs
  • 3 tablespoons Dijon mustard
  • 1 tablespoon chopped fresh tarragon (or 1 tsp dried)
  • Freshly ground pepper to taste
  • 1/4 cup olive oil
  • 1 cup panko breadcrumbs

Corn and Pepper Fritters

  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon chilli powder
  • Freshly ground pepper to taste
  • 1/2 cup cold water
  • 1 cup fresh corn kernels (or defrosted frozen kernels)
  • 1/4 cup diced roasted red pepper
  • Olive oil for frying

Easy Mediterranean Salsa

  • 1 tablespoon olive oil
  • 1/4 cup chopped bacon
  • 1/2 cup chopped onions
  • 1 cup pureed canned tomatoes
  • 1/4 cup chopped pitted black olives
  • 1 tablespoon chopped parsley
  • Salt and freshly ground pepper to taste
