  • 1/2 cup sliced morels, washed
  • 1/4 cup heavy cream
  • 1 tablespoon duck fat
  • 2 strips double smoked bacon
  • 1/4 pound chicken liver
  • 6 tablespoons cognac
  • 1 clove garlic, minced
  • 1/4 cup port
  • 2 cups dark chicken stock
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons all purpose flour
  • 3 tablespoons fresh leaves of thyme
  • 2 tablespoons fresh tarragon, finely, chopped
  • caramelized onion, (recipe follows)
  • short crust pastry, (recipe follows)

Shortcrust Pastry

  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 150 grams unsalted butter
  • 5 tablespoons ice water

Caramelized Onions

  • 4 tablespoons olive oil
  • 2 medium onion, fine julienne
  • 9 sprigs thyme, tied for cooking
