- 6 tablespoons cognac
- 1 clove garlic, minced
- 1/4 cup port
- 2 cups dark chicken stock
- 3 tablespoons unsalted butter, softened
- 2 tablespoons all purpose flour
- 3 tablespoons fresh leaves of thyme
- 2 tablespoons fresh tarragon, finely, chopped
- caramelized onion, (recipe follows)
- short crust pastry, (recipe follows)
Shortcrust Pastry
- 2 cups all purpose flour
- 1/4 teaspoon salt
- 150 grams unsalted butter
- 5 tablespoons ice water
Caramelized Onions
- 4 tablespoons olive oil
- 2 medium onion, fine julienne
- 9 sprigs thyme, tied for cooking
