Cheese and Onion Tart

Ingredients

Pastry

  • 1 cup all purpose flour (250 ml)
  • 1/3 cup cold butter (75 ml)
  • 1/2 teaspoon salt (2 ml)
  • 1/4 teaspoon cracked black pepper (1 ml)
  • 1 egg, yolk
  • 1/4 cup buttermilk (60 ml)
  • 1 tablespoon chopped fresh thyme (15 ml)

Filling

  • 1 tablespoon butter (15 ml)
  • 6 large shallots, finely sliced, or use 1 large onion
  • 1 cup 10% cream (250 ml)
  • 4 egg yolks
  • Freshly grated nutmeg, to taste
  • Coarse salt and freshly cracked black pepper, to taste
  • 4 ounces Mont St. Benoit cheese, broken into pieces (113.5 g)
  • Thyme sprigs, for garnish

Apple Blueberry Relish

  • 1/4 cup red onion, finely chopped (60 ml)
  • 1 Granny smith apple, peeled, cored, diced (1/4-inch)
  • 2 tablespoons brown sugar (30 ml)
  • 1 cinnamon stick (about 3-inch stick)
  • pinch of ground allspice
  • 1 tablespoon apple butter (15 ml)
  • Zest of ½ lemon
  • 1 tablespoon lemon juice (15 ml)
  • pinch of salt
  • 1/4 cup apple cider vinegar (60 ml)
  • 2 tablespoons apple brandy/calvados (30 ml)
  • 1/2 cup blueberries, fresh or frozen (500 ml)
  • 2 teaspoons Dijon mustard (10 ml)
  • 1 tablespoon chopped parsley (15 ml)
