Ingredients
Dessert can be a challenge when entertaining guests - not everyone is a chocoholic, some people have smaller appetites, and the pressure's on because it's your last chance to impress! I find a citrus dessert is the best option. I do like this cake as a dessert, but I often will wrap up a portion for the guests to take home - it's delicious served warm for breakfast the next day!

Cake
- 1 large egg
- 1 large egg white
- 1 1/4 cups sugar (300 ml)
- 2/3 cup extra virgin olive oil (150 ml)
- 3/4 cup 2 % milk (175 ml)
- 2 tablespoons lemon zest (or orange zest) (25 ml)
- 1 cup all purpose flour (250 ml)
- 1/4 teaspoon baking powder (1 ml)
- 1/4 teaspoon baking soda (1 ml)
- Dash of salt
Steeped Citrus
- 2 navel oranges
- 2 tangerines
- 2 blood oranges, or grapefruit
- 2 tablespoons extra virgin olive oil (25 ml)
