- 1 1 Belgian endive, washed and cut into 1-inch pieces
- 2 2 small ripe tomatoes, washed, cored and cut into ½ inch cubes
- 8 ounces cooked chicken, boned and shredded (230 g)
- 6x1 ounce slices of bacon, cooked until crisp (170 g)
- 2 2 ripe avocados, peeled and sliced just before serving
- 4 large hard boiled eggs, peeled and halved
- 1/2 pound Roquefort cheese (225 g)
- 1/4 cup cider vinegar (60 ml)
- 1 clove garlic, peeled and finely chopped
- 3/4 cup olive oil (175 ml)
- Fresh chives, cut on a diagonal into 1 inch/2 cm lengths
- Salt and pepper, to taste
