Ingredients
Lemon Mousse
- 1/3 cup lemon juice
- zest of 2 lemons
- 2 small eggs, room temperature
- 3/4 cup sugar
- 1 1/2 sheets of gelatin, bloomed in cold water and drained
- 1 cup 35% cream, whipped to soft peaks
Strawberry Sorbet
- 2 pounds strawberries, hulled and roughly chopped
- 4 basil leaves
- 1/3 cup corn syrup
- lemon juice to taste
- 3 tablespoons simple syrup
Strawberry Consommé
- 1 1/2 cups strawberries, roughly chopped
- 1 cup strawberry puree
- 1 tablespoon balsamic vinegar
- 3 tablespoons honey
- 1 vanilla bean, seeds only
- 1/4 cup late harvest Riesling
Assembly
