Lemon Mousse with Strawberry Consommé

Ingredients

Lemon Mousse

  • 1/3 cup lemon juice
  • zest of 2 lemons
  • 2 small eggs, room temperature
  • 3/4 cup sugar
  • 1 1/2 sheets of gelatin, bloomed in cold water and drained
  • 1 cup 35% cream, whipped to soft peaks

Strawberry Sorbet

  • 2 pounds strawberries, hulled and roughly chopped
  • 4 basil leaves
  • 1/3 cup corn syrup
  • lemon juice to taste
  • 3 tablespoons simple syrup

Strawberry Consommé

  • 1 1/2 cups strawberries, roughly chopped
  • 1 cup strawberry puree
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons honey
  • 1 vanilla bean, seeds only
  • 1/4 cup late harvest Riesling

Assembly

  • Strawberry Sorbet
  • Lemon Mousse Rounds
  • Strawberry Consommé
  • 4 small sprigs of micro basil
