Oven Braised Lamb Stew and Winter Squash Cobbler

Ingredients

Oven Braised Lamb

  • 6 sprigs parsley
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 2 bay leaves
  • 3 pounds lamb shoulder, trimmed of excess fat, cut into 1 ½ inch cubes
  • 3 tablespoons olive oil
  • 1 1/2 cups white wine
  • 2 1/2 cups beef stock
  • 4 cloves garlic, chopped
  • 1/2 cup leeks, medium diced
  • 1/2 cup onion, medium diced
  • 1 cup button mushrooms, quartered
  • 1 cup carrots, coined
  • 2 cups winter squash, peeled, cut into 1 inch cubes
  • 2 tablespoons unsaltedbutter
  • 3 tablespoons all purpose flour

Pumpkin Bisquits

  • 2 1/4 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/2 cup butter, chilled and diced
  • 1/2 cup pumpkin puree
  • 1/4 cup heavy cream
  • 1/3 cup brown sugar
  • 4 tablespoons honey
  • 4 tablespoons chives, diced
  • 1 egg beaten
