- 3 bunches baby golden beets, leaves and stems removed and washed
- 1 bunch thyme
- 1 bunch young and tender flat leaf Italian parsley, leaves picked and washed
- 1 cup orange juice
- 1 cup water
- Ground fennel seeds
- Extra-virgin olive oil
- Salt
- Fresh ground Black Pepper
- 2 heads of garlic, split in half
- 1 bunch chives, cut into 1â batons
Horseradish Vinaigrette
- 1/4 cup Champagne vinegar
- 1 1/2 cups pure olive oil
- 2 tablespoons orange juice
- Extra-virgin olive oil
- 1/4 cup finely grated horseradish
- Salt
- Pepper
