Ingredients

Spring Rolls

  • 1/2 pound lean ground pork
  • 2 teaspoons fish sauce
  • 2 garlic, cloves, minced
  • 1 egg, white
  • 1/2 pound shrimp, cleaned, coarsely, chopped
  • 30x6 inch rice paper, wrappers
  • 1/4 cup cellophane noodles
  • 2 tablespoons cloud-ear mushroom
  • 2 carrot, julienne cut
  • 16 snow peas, julienne cut
  • 1 egg, beaten
  • 1 teaspoon water
  • 1/2 cup daikon, julienned
  • 2 tablespoons bamboo, shoots, julienned
  • 4 cups vegetable oil
  • 1 bunch fresh cilantro, leaves, only
  • 1/2 bunch fresh mint, leaves
  • 2 lettuce, Boston, head, washed and separated

Dipping Sauce

  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 3 tablespoons water
  • 2 tablespoons sugar
  • 2 garlic, cloves, minced
  • 1 scallion, minced
