  • 1kg small sebago potatoes, scrubbed
  • Salt & freshly ground black pepper
  • 60ml (1/4 cup) olive oil
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 5 (about 250g) bacon rashers, rind removed, finely chopped
  • 200g button mushrooms, finely chopped
  • 210g (1 medium head) broccoli, finely chopped
  • 2 tbs teriyaki marinade or soy sauce
  • 1 tbs dried parsley
  • 1 tbs mixed dried herbs
  • 2 tsp crushed dried chillies
  • 1/4 tsp cayenne pepper
  • 60g (3 tbs) butter
  • 25g (1/4 cup) shredded parmesan
  • 4 eggs
  • Extra dried mixed herbs, to serve
