  • 50g goat's cheese
  • 60ml (1/4 cup) olive oil
  • 1 garlic clove, crushed
  • 8 ripe roma tomatoes, cores removed, halved lengthways
  • Salt & freshly ground black pepper
  • 4 (about 180g each, 4cm thick) beef fillet steaks
  • Baby spinach leaves, to serve
