Salmon with red wine sauce

Ingredients

  • 1 bottle (750ml) light red wine (such as pinot noir)
  • 2 eschalots, chopped
  • 1 bouquet garni*
  • 4 peppercorns
  • 3 tsp caster sugar
  • 1 cup (250ml) good-quality beef or veal stock
  • 2 tbs olive oil
  • 120g unsalted butter, chilled, cubed
  • 180g speck or pancetta, cut into thick 2cm-long batons
  • 1 onion, thinly sliced
  • 150g button mushrooms, sliced
  • 6 (about 150g each) salmon fillets, skin on
