Prawn caesar salad

Ingredients

  • 4 eggs
  • 4 rindless bacon rashers
  • 4 baby cos lettuces, leaves separated, washed, dried
  • 1kg cooked medium king prawns, peeled, leaving tails intact
  • 240g Woolworths bake-at-home Turkish bread, cut into 1cm-thick slices, toasted, torn in half
  • 2 tbs coarsely chopped fresh continental parsley
  • Caesar dressing

  • 1 egg yolk
  • 1 garlic clove, crushed
  • 1 tsp Dijon mustard
  • 2 anchovy fillets in oil, drained
  • 2 tbs fresh lemon juice
  • 125ml (1/2 cup) olive oil
