Ingredients

  • 1 cup pancake mix (such as BISQUICK®, KRUSTEAZ® or ARROWHEAD MILLS®)
  • 3/4 cup fine cornmeal
  • 2 teaspoons packed brown sugar
  • 1/4 teaspoon baking soda
  • 1 pinch ground red pepper (cayenne)
  • 1 pinch onion powder
  • 1 pinch ground cinnamon or Chinese five-spice
  • 3 large eggs
  • 3 tablespoons canola or olive oil
  • 1 cup frozen white corn kernels
  • 1 cup Farmer John® Regular Smoked Bacon 12oz, cooked and crumbled
  • 1/2 cup pecan pieces
  • 1/2 cup chopped green onions, if desired
  • Boiling water
