Honey-roasted Pears With Caramel Sauce
Ingredients
- 3/4 cup granulated sugar
- 3/4 cup cold water
- 2 tablespoons packed brown sugar
- 2 tablespoons honey
- 2 tablespoons brandy or pear brandy
- 1 tablespoon lemon juice
- 1 tablespoon butter or margarine
- 1 vanilla bean, split in half lengthwise
- 1 stick cinnamon
- several dashes of ground nutmeg
- 2 very smal ripe Anjou, Bosc, or Bartlett pears, peeled
- 1/4 cup whipping cream
- Pomegranate seeds or fresh fruit and mint sprigs (optional)
