Ingredients

  • 2 domestic duck legs
  • 2 domestic duck carcasses
  • 1 tablespoon olive oil
  • 1 carrot
  • 1 celery
  • 2 onions
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • 8 peppercorns
  • 1 allspice
  • 1 clove
  • 1/4 cup cognac
  • 1 cup dry white wine
  • 1/2 cup sweet muscat wine (Beaumes de Venise is a good choice)
  • 8 cups unseasoned chicken stock or low-sodium chicken broth
  • 2 tablespoons dry white wine
