Herbed Fettuccine With Snap Peas

Ingredients

  • 2 9 ounce package refrigerated fettuccine or 9 ounces dried fettuccine
  • 1/3 cup vegetable broth or water
  • 5 green onions, thinly sliced
  • 1 1/2 cups sugar snap peas, cut in half crosswise , or 12 ounces torn fresh spinach (9 cups)
  • 1/3 cup snipped fresh parsley
  • 1/3 cup snipped fresh dill, basil, or chervil; or 2 teaspoons dried dillweed, basil, or chervil, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 ounces goat cheese (chevre)
  • 3/4 cup low-fat milk
  • 2 tablespoons margarine or butter
  • 1 large tomato, chopped
  • 1/4 cup toasted chopped hazelnuts
  • 6 artichokes, steamed and halved, or canned, drained (optional)
