Thai Pork Satay

Ingredients

  • 1 1/2 pounds pork tenderloin or boneless pork loin roast
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons finely chopped fresh lemongrass or 1/2 teaspoon finely shredded lemon peel
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1 recipe Satay Sauce
  • 3 cups thin bite-size strips cucumber and/or carrots or packaged shredded cabbage with carrot (coleslaw mix) (optional)
  • Chopped peanuts (optional)
