6 stices smoked bacon, cut into cubed
6 ounces uncooked skinless, boneless chicken breast
1 1/2 tablespoons chopped fresh cilantro
2 tablespoons water
1/2 teaspoon seeded, finely chopped fresh jalapeno pepper
1 cup chopped spinach (chop spinach in strips crosswise)
JICAMA SALSA:
1 cup peeled, chopped yellow tomato (about 1 tomato)
1 cup peeled, finely diced jicama
1/4 cup coarsely chopped red onion
2 tablespoons peeled, coarsely chopped fresh jalapeno pepper (about 1 small jalapeno)
1/2 tablespoon finely chopped garlic (about 2 cloved)
2 teaspoons freshly squeezed lime juice
2 tablespoons chopped fresh cilantro
