Apricot-Glazed Salmon With Fruited and Herbed Rice

Ingredients

  • 2 1/2 cup chicken broth
  • 1 cup white rice
  • 1 tbsp (unsalted) butter
  • 2 tbsp chopped dried apricots
  • 1/2 cup mixed fresh herbs; thyme, parsley, chives, rosemary and/or oregano
  • 1/4 tsp coarse salt
  • 1/8 tsp fresh ground black pepper
  • 4 6-oz salmon fillets
  • 1 tbsp (unsalted) butter
  • 1/3 cup apricot preserves
  • 1/3 cup sauvignon blanc white wine
  • 1/2 tsp grated fresh ginger
  • 1/4 cup toasted, sliced almonds, to garnish
  • Parsley, to garnish, if desired
