Two Bean and Veggie Soup

Ingredients

  • 1 tablespoon olive oil
  • 1-1/2 cups chopped onion
  • 1/2 cup chopped carrot
  • 1/4 cup sliced celery
  • 1/4 teaspoon dried thyme leaves, crushed
  • 1 garlic clove, minced
  • 2 cans (each 14.5 oz.) reduced-sodium & reduced-fat chicken broth
  • 2 cups water
  • 1 cup shredded cabbage (as for slaw)
  • 1 can (15 oz.) cannellini beans, rinsed & drained
  • 1 can (15 oz.) black beans, rinsed & drained
  • Salt and pepper
  • 2 tablespoons chopped cilantro

Description

This Meatless Soup Contains Chicken Broth, With Canned Cannellini And Black Beans, Plus Onion, Carrot, Celery, And Cabbage. It Adds Thyme And Cilantro For Flavor.
