Ingredients

  • 1 cup bulgur wheat
  • 1 1/2 cups water
  • 1 cup fresh parsley, minced
  • 1/2 cup fresh mint leaves, minced
  • 1 1/2 cups tomatoes, seeded and finely chopped
  • 2 green onions, minced
  • 1/2 cup cilantro, minced
  • 1 cup pine nuts
  • 2 medium avocados, peeled and chopped
  • 1 small head lettuce for garnish
  • Dressing:
  • 1/4 cup plus 3 Tablespoons fresh lime juice
  • 1 1/2 Tablespoons sauce from a can of chipotle chiles in adobo sauce
  • 3/4 teaspoon salt
  • 4 cloves garlic, minced
  • 1/4 cup plus 3 Tablespoons olive oil
