Sassy Sauced Grouper or Cod

Ingredients

  • 4 5 oz grouper fillets
  • Sea salt and freshly ground pepper to taste
  • 1/2 tsp Cajun seasoning
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 14.5 oz cans diced tomatoes with garlic, basil and oregano
  • 1 tsp sugar
  • 1 tbsp capers, rinsed
  • 1 tbsp green olive juice, or 1/3 cup chopped olives
  • 3 tbsp coarsely chopped basil
  • 1 tbsp red wine, Malbec or Pinot Noir
  • Fontinella cheese, grated, to taste
