Ingredients

  • 1 oz peeled sweet potato, finely chopped
  • 1 oz washed Yukon gold potato, finely chopped
  • 1 oz washed whole beet
  • 1/2 tbsp olive oil
  • 1 lb duck breast, cut in four 4 oz portions
  • Kosher salt
  • 6 oz (organically grown) baby spinach
  • Crumbled goat cheese
