Jalapeno Veggie Burger

Ingredients

  • Vegetable mixture:
  • 2 teaspoons diced jalapeno pepper
  • 2 tablespoons minced garlic
  • 3 tablespoons diced black olives
  • 4 tablespoons roasted red bell peppers, drained and diced
  • 4 tablespoons artichoke hearts, drained and diced
  • 3 tablespoons banana peppers, drained and diced
  • 1/4 cup finely chopped red onion
  • 3/4 cup black beans, drained
  • 1 cup white beans, drained
  • 1 cup chickpeas, drained
  • Dry mixture:
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon red pepper flakes, optional
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon celery salt
  • 3/4 teaspoon paprika
  • 3/4 teaspoon chili powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 tablespoons chopped parsley
  • 4 tablespoons seasoned bread crumbs
  • 1 1/2 cups rolled oats
  • Other:
  • 2 eggs, slightly beaten
  • 4 cups Boston lettuce: washed, dried, and torn into bite sized pieces
  • Chipotle Lime Cream:
  • 5 ounces cream cheese
  • 1 1/2 tablespoons Miracle Whip salad dressing
  • 1 1/2 tablespoons sour cream
  • 1 1/2 tablespoon chopped cilantro
  • 1/2 cup sun-dried tomatoes cut into slivers
  • 1/4 teaspoon chipotle chili powder or to taste
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 teaspoons fresh lime juice
  • Zest of 1 lime
  • Salt and fresh ground pepper to taste
  • 6 focaccia or kaiser buns, split
