- 1 small onion, chopped
- 1 tsp minced garlic
- 1 Tbsp extra virgin olive oil
- 2 1/2 cups chicken stock
- 1/2 head escarole, washed and chopped roughly
- 1/4 cup orzo pasta
- 2 fresh or 1 dried bay leaf
- 1 Tbsp fresh rosemary chopped fine or 1 tsp dried, crushed rosemary
- 1 Tbsp chopped fresh parsley
- Salt to taste
- Fresh ground black pepper to tase
- 1/4 tsp dried red pepper flakes (optional)
- Grated Parmesan cheese for topping (optional)
