Mexican Tossed Salad with Lime-Chili Dressing

Ingredients

  • 1 head romaine lettuce, ribs removed, torn into small pieces
  • 1 box cherry or grape tomatoes
  • 4 large fresh tomatillos, sliced (canned ok if you can't get fresh)
  • 1 cucumber, seeded, sliced
  • 1/2 red onion, sliced
  • 4 radishes, sliced
  • 1-small fresh jicama, peeled and sliced (Mexican water chestnut)
  • 1 carrot, shaved with vegetable peeler
  • Dressing:
  • Juice of 4 fresh limes, not bottles
  • 4 fingerhot or serrano peppers, seeded
  • 1 tbsp fresh cilantro
  • 1 tsp lime zest
  • 3 tbsp cider vinegar
  • 1 tbsp honey
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp whole-grain mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • Garnishes: herb croutons, grated sharp cheddar cheese, sliced hard boiled eggs (omit yolks to lower fat), sprigs of cilantro
