Ingredients
- 1 head romaine lettuce, ribs removed, torn into small pieces
- 1 box cherry or grape tomatoes
- 4 large fresh tomatillos, sliced (canned ok if you can't get fresh)
- 1 cucumber, seeded, sliced
- 1/2 red onion, sliced
- 4 radishes, sliced
- 1-small fresh jicama, peeled and sliced (Mexican water chestnut)
- 1 carrot, shaved with vegetable peeler
- Dressing:
- Juice of 4 fresh limes, not bottles
- 4 fingerhot or serrano peppers, seeded
- 1 tbsp fresh cilantro
- 1 tsp lime zest
- 3 tbsp cider vinegar
- 1 tbsp honey
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp whole-grain mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- Garnishes: herb croutons, grated sharp cheddar cheese, sliced hard boiled eggs (omit yolks to lower fat), sprigs of cilantro
