Baharat Chicken and Artichokes

Ingredients

  • 4 tablespoons extra-virgin olive oil
  • 2 (10 oz) packages frozen artichoke hearts, thawed and patted dry
  • 2 pounds boneless skinless chicken thighs, cut into 2" pieces
  • Salt and freshly ground black pepper
  • 1 large yellow onion, peeled and minced
  • 1 large carrot, peeled and diced
  • 1 tsp Baharat spice mix (see recipe below)
  • 2 cups low-sodium chicken stock
  • 1 cup water
  • 1 tablespoon cornstarch mixed with
  • 2 tablespoons cold water
  • 2 tablespoons chopped fresh mint
  • Baharat:
  • 2 tablespoons black peppercorns
  • 2 tablespoons allspice berries
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
