Ingredients

  • 1/3 cup olive oil
  • 1 lb frozen pearl onions, thawed
  • 4 tsp balsamic vinegar
  • 1/2 butternut squash, peeled and cubed
  • 2 fresh carrots, peeled and thickly sliced

  • 1/2 cup Pinot Noir or other red wine (or substitute chicken broth, if desired)
  • 1/4 cup golden raisins
  • 1/4 cup dried cranberries
  • 1/4 cup currants
  • 1 14.5 oz can chicken broth, 99% fat free, reduced sodium
  • 1 cup apple juice
  • 1 tsp thyme
  • 1/4 tsp cinnamon
  • 1 lb frozen peas
  • 2 cups couscous, prepared according to package directions
