Pasta Shells With Roasted Vegetables And Italian Sausage

Ingredients

    1 link Sheboygan Spice Recipe Hot Italian Sausage, remove skin, cook according to package directions

    1 eggplant, quartered lengthwise and cut into 1-inch pieces
    1 (14-ounce) cans quartered artichoke hearts in water, drained
    2 tomatoes, seeded and quartered
    1 zucchini, sliced and halved
    1/4 quarter of a cabbage, quartered again and par-boiled
    2 tablespoons olive oil
    2 tablespoons fresh thyme leaves or 1 teaspoon dried
    2 tablespoons chopped fresh rosemary leaves, or 1 teaspoon dried

    2 cups uncooked Healthy Harvest Whole wheat Penne Pasta
    1 cup chopped roasted red peppers

    1 cup of the pasta water
    2 tablespoons balsamic vinegar
    1 tablespoon Dijon mustard
    1/2 teaspoon sea salt
    1/2 teaspoon freshly ground black pepper

    1/2 cup chopped fresh basil leaves
    4 tablespoons shredded Parmesan
