Dinner Chef Salad

Ingredients

    I head iceberg lettuce, roughly torn or chopped
    1 cucumber, peeled and chopped
    3 Roma tomatoes, chopped
    1 red onion, sliced thin
    11 Kalamata olives
    20 baby carrots, shredded or slivered
    3 stalks celery, chopped
    Pepperocini, optional and to taste
    Pre-cooked, hickory-smoked ham steak, chopped into chunks (The bigger the bite, the better my husband likes it!)
    Smoke turkey breast, chopped same size as ham above
    Shredded cheese (I used Parm. cheese this time because that was what I had on hand. I usually have low-fat cheddar or the low-fat Mexican 4 cheese mix.)


    Mix ingredients well. Top with hard-boiled eggs (I use the whites only myself, but my husband prefers the entire egg.)

    Dressing is optional. We use fat-free Italian or fat-free Cesar.

    Seafood version:
    Substitute imitation crab and cooked shrimp for meat.
    Arrange fresh quarters of lemon to top of salad with egg quarters.
