Ingredients

    4 eggs
    12 oz. egg substitute, liquid (= 6 eggs)
    1/3 c. flour
    1 T baking powder
    2 c. cottage cheese, 2%
    12 oz. colby/jack cheese, 2%, shredded
    2 c. cooked vegetables (e.g., leftover broccoli, squash, zucchini, or spinach)
    1 c. red bell peppers, chopped
    1/2 c. onions, chopped
    1/3 c. Smart Balance, melted
    1 can (4 oz.) green chilies

Recipe Found Online. Young Living In Texas Attributes The Original Recipe To The Missouri Innkeepers Book, But We Have Changed It Substantially. We Reduced Flour, Fat And Green Chilies And Added More Vegetables.
