Sesame Peanut Noodles

Ingredients

    For Noodles:
    8 oz Whole Wheat Spaghetti

    For Dressing:
    2 Tbs rice vinegar
    1/4 cup low sodium soy sauce
    1/4 cup peanut butter
    2 Tbs grated ginger
    1 Tbs dark sesame oil
    1 tsp brown sugar
    Juice of one lime
    1/2 cup water, hot

    For Assembly:
    1/2 bag store-bought coleslaw mix
    1/2 cup red bell pepper
    1/2 cup cilantro, chopped
    1/2 a lime, squeezed
    1/2 cup apple
    1/2 cup jicama
    1 tsp toasted sesame seeds
    2 scallions, julienne

    Optional garnishes:
    1/2 cup dry-roasted peanuts
    chopped cilantro
    lime wedges
